Knife sets worth sharpening
Most sets are two useful knives and five that hold the block up. Buy the two, learn the stone, skip the rest.

A block of eight knives is a merchandising decision. Almost all home cooking uses a chef's knife and a paring knife.
What the extra knives are for
The serrated bread knife earns its space if you buy unsliced bread. The rest — the santoku, the utility, the boning knife, the four steak knives — exist because a block looks better full.
Steel that takes an edge versus steel that keeps one
Harder steel holds an edge longer and chips more easily. Softer steel dulls faster and sharpens in thirty seconds. For a home kitchen where knives meet ceramic plates and the occasional bone, softer is the more forgiving choice, and the one that stays sharp in practice because sharpening it is easy enough that you actually do it.
The part that matters
A cheap knife you sharpen monthly outperforms an expensive knife you never sharpen. A basic whetstone costs less than the fifth knife in any block.
