Noise cancelling for night flights
Cancellation depth matters less than clamp force when you are trying to sleep sitting upright for seven hours.

Noise cancellation works best on constant low-frequency sound, which is exactly what a jet engine produces. Every set here handles the drone. What separates them is whether you can wear them lying against a window for seven hours.
Clamp force is the real specification
Nobody publishes it. Too loose and the seal breaks when your head tilts, taking the cancellation with it. Too tight and you get a headache by hour three. The winner here is not the deepest canceller in the group, it is the one that stayed sealed and stayed comfortable.
What still gets through
Voices, crying, and trolley rattle. Cancellation is poor at those frequencies and no marketing claim changes the physics. Passive isolation from the earcup does more work there than the electronics do.
